SUGAR CANE, MAPLE SYRUP, BLACKBERRY, CHERRY
This is a honey process which is a method in which coffee cherries are picked and sorted, have their skins and pulps removed like other types of coffee, but are then dried without washing off the sticky-sweet outer layer of the fruit. Honey process beans spend less time in water than washed beans do so less fermentation occurs & not as much of the sugar in the bean is converted to acid. This coffee was sourced from a producer in the south of the state of Minas Gerais, in the region of Mantiqueira de Minas. With a centuries-old tradition of producing high-quality coffee, Mantiqueira de Minas is today one of the most awarded regions in Brazil. These are rare and surprising coffees, reflecting the combination of a unique terroir and local know-how that continually strives for excellence.
